Just a few tidbits of information to make your low-fat cooking and dining experiences more enjoyable.

Instead of sauteeing veggies in butter or oil, steam them or sautee them in a tablespoon of water. Add half a pat of butter or margarine to your serving at the table. That way you get all the butter flavor without using so much and adding unnecessary fat.

The giant bagels found in the proliferation of bagel shops can have as many as 500 calories each! If you must have one, eat them with jelly rather than fattening butter or cream cheese.

A recommended serving of meat should be approximately 4-6 oz. This is only about the size of a deck of cards.

Avoid fast food like the plague!! It is full of empty calories, and in most cases doesn't even taste good! Choosing a salad might seem like a sensible choice, but the containers of dressing can pack as much fat as a hamburger.


Fantastic Foods makes a number of hearty and satisfying food products, most of which are low fat and low calorie. My favorite is the dried "refried" bean mix. Add boiling water and stir to make really tasty unfried "refried" beans. Smear some on a low-fat flour tortilla, add some fresh veggies and fat-free or low-fat shredded cheese, roll up, eat!

This might sound like an infomercial, but those immersion blenders (particularly the one made by Cuisinart)do whip skim milk into something akin to whipped cream. I like to make a breakfast shake by first whipping one cup of skim milk into a froth, then adding sliced ripe banana (or other soft fruit) and a pinch of Equal or honey, then whipping until thick. The volume of the milk more than doubles, and it becomes thick and creamy. And this drink is very filling too.

Fat-free mayonnaise is much too sweet and gelatinous for my taste. I prefer to purchase low-fat soy mayonnaise (Nasoya brand is good). It has a decent consistancy, has a flavor closer to home-made mayo, and also contains the benefits of soy.

Hate the effects of skim milk in coffee? Try Land-O-Lakes Fat Free Half-and-Half. It's skim milk with added emulsifiers and other magical ingredients. And unlike the fat-free non-dairy creamers on the market, it doesn't add any other flavors, nor is it sweet.

A cup of hot cocoa made with skim milk, Hershey's cocoa, and Equal, can satisfy a chocolate craving. Too warm for hot cocoa? Well, you need to heat the milk to properly dissolve the cocoa...just use less milk and add ice when completely blended.

Spray air-popped popcorn with butter-flavored cooking spray, then toss with some Old Bay, Parmesan Cheese, dried herbs, salt and pepper, curry powder, etc., for a filling, low-calorie, snack.

Eat at least five fruits and vegetables a day. Impossible? Try cutting a banana and some strawberries into your bowl of corn flakes in the morning, have an orange with lunch, serve a salad AND a veggie with dinner, and then have a baked apple (below) for dessert. That's at least six servings right there!

Wash, stem and core an apple. Put in a microwave-safe dish. Add a tablespoon of brown sugar to the cavity, along with a few raisins. Micro cook 3 minutes on high or until soft. Serve warm with a scoop of fat-free frozen yogurt, or a drizzle of fat-free half-and-half.

Frozen low-calorie dinners are ok, but often seem rather skimpy in portion. I usually micro cook an additional cupful of frozen veggies to eat along with it. Some of my favorite frozen vegetables: peas, string beans, sugar snap peas, brussels sprouts.

Craving a burger but can't afford the fat intake? Gently remove the dirt and stem from a portobello mushroom about 4" in diameter. Micro cook for 3 minutes, until soft. Place cooked 'shroom on a hamburger bun, add some low-fat mayo, onions, a little lettuce and tomato, perhaps a slice of fat-free or reduced-fat cheese, and voila! A sandwich one can sink his or her teeth into.

Skip the "extras": eat your sandwich without the potato chip accompaniment; skip the gravy on your mashed potatoes; ignore the bacon bits and croutons at the salad bar; don't order the "bottomless" chips and salsa appetizer at your favorite Tex-Mex place.

Eat only when you are HUNGRY.

Go grocery shopping on a full stomach to prevent junk-food impulse buys.

Make omlettes with egg-whites or Egg Beaters, skip the cheese, and top with fresh salsa.
